Pumpkin Oatmeal

This is Fall, in a bowl.

And. It. Is. Ama-zing!

It’s warm and creamy, and will fill your kitchen with that wonderful home baked cinnamon-y Fall smell.  It’s a great way to start your day, and a great way to use up any extra pumpkin you may have cluttering up your fridge.

I know I know, I can hear it now:

But seriously, you have to try this one!

Please note that this is a single serving recipe.  The ol’Hubster isn’t a huge oatmeal fan so I devour this all by myself.  And yes sometimes I double the recipe just for me. Don’t judge.

The Recipe

1/2 cup old fashioned rolled oats

1 cup of milk (I ran out of milk and had to top it off with some of Hubby’s coffee cream – sorry hunny! 3/4 cup of milk and 1/4 cup of 10% makes this delicious)

1/4 cup pumpkin puree (if you’re buying it be sure to get the plain pumpkin, not pumpkin pie filling)

3 dashes ground cinnamon (or you could use pumpkin pie spice)

Handful raisins, or cranberries (optional)

1 tablespoon chopped walnuts (optional)

Honey to taste

The Procedure

Stir the oats, milk, pumpkin, cinnamon, and raisins or cranberries together in a pot.
Bring to a gentle boil, then reduce heat to low, and simmer for 5 minutes, or until oatmeal reaches desired consistency.
Transfer to serving bowl and top with walnuts and honey.
Savour and enjoy the beauty of Fall in a bowl.

  1. I have been wanting to try a recipe that I found for overnight pumpkin oatmeal in the crock-pot. This sounds similar. The smell would be wonderful!
