This is Fall, in a bowl.
And. It. Is. Ama-zing!
It’s warm and creamy, and will fill your kitchen with that wonderful home baked cinnamon-y Fall smell. It’s a great way to start your day, and a great way to use up any extra pumpkin you may have cluttering up your fridge.
I know I know, I can hear it now:
Please note that this is a single serving recipe. The ol’Hubster isn’t a huge oatmeal fan so I devour this all by myself. And yes sometimes I double the recipe just for me. Don’t judge.
The Recipe
1 cup of milk (I ran out of milk and had to top it off with some of Hubby’s coffee cream – sorry hunny! 3/4 cup of milk and 1/4 cup of 10% makes this delicious)
1/4 cup pumpkin puree (if you’re buying it be sure to get the plain pumpkin, not pumpkin pie filling)
3 dashes ground cinnamon (or you could use pumpkin pie spice)
Handful raisins, or cranberries (optional)
1 tablespoon chopped walnuts (optional)
I have been wanting to try a recipe that I found for overnight pumpkin oatmeal in the crock-pot. This sounds similar. The smell would be wonderful!
I didn’t even think of putting it in the crock-pot, that would smell amazing in the morning!
