Hubby and I are moving. Oh my goodness what a terrible ordeal it all is. For those of you who are lucky to have stayed in the same place for years I must remind you how fortunate you all are. Packing up your entire life into boxes is a nightmare.
So in the midst of all this craziness we haven’t had much time for at home meals. There’s been a lot of driving back and forth, late nights, and, I admit, random lazy attacks after all the running around.
So today I decided that since we would be out late once again, that I should make dinner. And not just any dinner – shrimp tacos.

I love shrimp tacos. There I said it. They’re probably one of the main reasons that I have never been able to give up seafood. And do you know what the best part about shrimp tacos is? They are super fast and easy. Perfect for a good meal in the midst of a hectic schedule, and they’re just as good cold, so I made them up ahead of time so hubby and I can eat them on the road.
So let’s just get right to it shall we?
If you’re planning ahead you can make up the seasoning and keep it in an air tight container in your cupboard. I make up large batches of it and try to always have some on hand because I love it on everything.
For the taco seasoning you will need:
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon brown sugar
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
Put all the spices into a bowl and mix well. This recipe will yield 2 tablespoons.
For the tacos you will need:
- 1 lb shrimp – peeled, deveined, tails removed, thawed and rinsed
- Seasoning mix
- Water as needed
- Tortillas
- Your favourite toppings
Step 1: Place the shrimp in a fry pan over medium heat. Add 2 tablespoons taco seasoning and stir to combine. Add water a little at a time until you have reached desired sauciness.
Step 2: Cook shrimp until pink stirring often. Add more water as needed. Once done remove from heat.
Step 3: Lay out shrimp on a tortilla and top with your favourite toppings. I went with kale, tomatoes, salsa, sour cream, and cheddar cheese. But these would be fantastic with a variety of toppings. I’m thinking grilled pineapple or mango chutney next time!
Step 4: – Wrap up and enjoy!
There you have it, easy shrimp tacos all done in under a half hour.
